Ah, Easter, I do not have very strong memories of celebrating Easter on a regular basis with my mother. I do recall receiving a few of those large straw Easter baskets with the usual goodies (chocolate bunnies, sugar peeps, etc.) AND that obnoxious fake green grass strips that seemed to get everywhere. One thing is clear: Easter Day was a social/cultural holiday, not a time for religious reflection about Jesus Christ, the Atonement or the Resurrection. We never went to a church. Mother always prepared a ham dinner with mixed vegetables (called "succotash" in our home) and mashed potatoes. Hmmmm......still tastes good even today. The Easter baskets stopped appearing after the 7th grade.....I was too grown up.
You're not kidding about those yummy mashed potatoes--I still dream about them sometimes... Maybe your next post could be about her cooking, special dinners you remember, or any other memories connected to food and the kitchen.
